Can I take a deposit before starting a job?

Yes. Set a percent or fixed deposit once under Money → Standards → Quote defaults (or per quote in its Details), and it prints on the quote. When the customer approves online, Wraptor can hand them the deposit invoice and pay link in the same moment; when they say yes on the phone, the Mark approved sheet asks whether you already collected it, want a pay link copied, or want to skip it for now. The invoice carries the deposit and the balance — the customer pays each on one page, the schedule prints on the PDF, and a cash or check payment you record clears the deposit. The job's money line says whether the deposit is In or Pending, and a booking request in Scheduling is chipped Deposit paid or Deposit sent, so you can see where it stands before a vehicle goes on the calendar.
